the perfect barbecue chicken?
bugzy2284 asked:
a while back I had some barbecue chicken at a family friends house. It was the best that I have ever had. It looked way over cooked on the outside and wasnt appealing to the eye at all. It was dry and crispy on the outside but was extremely tender and had awsome babecue flavor. does anybody have a barbecue chicken recipe that is similar to this. or have any tips?

this one worked for me!
Island Barbecue Chicken
INGREDIENTS
2 cloves garlic, minced
1/2 cup chopped fresh ginger root
6 cups soy sauce
1 cup brown sugar
10 pounds boneless chicken thighs
DIRECTIONS
Place chicken in a container large enough to hold it all. In a separate medium bowl, combine the garlic, ginger, soy sauce and brown sugar. Mix well and pour over the chicken. Seal container and let marinate in the refrigerator overnight.
Preheat an outdoor grill for medium to low heat and lightly oil grate.
Grill chicken over medium to low heat for 1 hour, turning halfway through cooking time. Chicken is done when it’s juices run clear.

The key is marinade and low heat. Put the chicken on the grill while it’s very hot but no visible flames. Turn the chicken often and do not over cook. It will make the chicken chewy (gross). Keep the larger pieces in the middle of the grill because they need to cook more. But what made the outside very dark was probably the sugar in the marinade (or BBQ).

.you start with a hot grill cook your chicken brown in well on all sides…baste it with bbq sauce towards the end…and let it Caramelize a bit…….turn all your gas burners off except one and set it to low….move chicken to the opposite side of the grill and cook covered for 30 mins..
PS I prefer KCs masterpiece

what i do with mine is ,
in heavy foil / i place the marinated chicken w/the marinade ,loosely sealed and on the grill and let it sit on the WARM side of the bbq for 15 mins then open and flip reseal and leave another 10-15 mins till flesh is nice and white ( no pink ) remove from foil and place on hot to crisp turn a few times to prevent charring too much ( this is best with skin on )
marinade-
1/2 cup soy and worchestershire sauce
favorite bbq sauce 1/2 cup
garlic,onion POWDER 1-tsp ea.
lime or lemon juice
dash of tabasco (option)
mix and and chicken coat well and refrigerate 2-hrs min. you can do this night before !
BASTE WITH ADDITIONAL BBQ SAUCE FOR GLAZE !
hope you like it ,it’ll be both tasty,& crispy !!
