    Portobello Mushroom “Steaks”

Large portobello mushrooms, stems removed, brushed clean

1/2 C extra virgin olive oil
    1/4 C balsamic vinegar
2 cloves garlic minced and mashed to a paste
    1 t. sugar
    Salt and pepper to taste

Whisk all ingredients except mushrooms, brush sauce lightly over mushrooms, grill (about 3-5 min each side, starting with top down). Baste with remaining sauce every few minutes. Can be eaten like a steak, placed in a burger bun, or even sliced and served with other grilled vegetables.

Use marinade/sauce for other veggies such as eggplant, sliced onions, zuccini etc.

Tofu, if frozen and defrosted also grills nicely, if cut in thick slices. A good marinade:
    1/2 C light soy sauce
    1/4 C veg oil
    1/2 C rice vinegar
3 t. dark sesame seed oil
several dashes hot pepper sauce (optional)
1-2 t. sugar (optional, but helps make a carmelized glazey type tofu)
2 T garlic powder (or fresh garlic paste) do not use garlic salt
    1 T fresh grated ginger
Mix well, dip frozen, defrosted tofu in sauce, grill, basting often. Reserved sause is nice for dipping.

    GRILLED VEGETABLES :
    4 zucchini
    2 eggplants
    4 yellow zucchinis
    olive oil
    thyme, salt & pepper

In an aluminium foil, put all the vegetables that you would have sliced or diced,
the salt, pepper, thyme and olive oil,
close the foil but leav a little opening, and cook on the barbecue.
Very simple and very tasty. In fact you can do the same proces with any vegetables.
Asparagus, Portobella or wild mushrooms are great like this.

    Happy Easter

As I understand it, rabbits are vegans. So, just go to the store and buy some rabbit and barbecue sauce. Then barbecue your rabbit, and enjoy your wonderful vegan barbecue.

I have vegan barbeque’s every year … to begin with I put out salsa , …and make an avocado and hot spinach dip(very easy) , humos .. serve with assorted crackers (check ingredients ) and chips ..next vegan potato salad ..make a regular potato salad but use a vegan mayonnaise instead of regular (where I live they have veganiase or nayonaise) , roast corns on the cob … buy frozen or fresh cobs sprinkle with a Cajun Spice or spice you like wrap in loose tin foil and place on grill ….. since I have meat eaters in my family but use no meat in my house.. .. I instead give them vegan veggie burgers , vegan dogs , sauerkraut , with assorted rolls ,(you can also get vegan chicken and sausage) I also marinate thinly sliced veggies as zucchini , tomato , red and yellow peppers, mushrooms, onions overnight in a lemon juice, dijon mustard , salt, pepper , a little olive oil , you can also use a vegan vinaigrette to marinate , put on foil on grill and roast ….You can prepare a brown rice indoors and place roasted veggies over it …..sometimes if I have more time I skewer them to roast over barbecue but make sure to soak the bamboo skewers in water before using .. Fresh pasta salad is also so easy to make and keeps well , you can still have veggie beans , make sure to have vegan barbecue sauces , I use organic ketchup and mustard .. fresh fruit bowl ..you can carve out 1/2 a watermelon and scoop little balls of assorted fruits back into it..it acts as the bowl and looks great (PS..barbecued pineapple and fruits are also delicious ) … there are many nice salads as cucumber salad with dill or salad topped with Mandarin oranges , flowered radishes , imitaion bacon bits (vegan) … some nice vegan brownies , candy and nuts .. .. and your barbecue should be a hit ..!!

you can make a homemade vegan barbecue sauce with some organic ketchup, blackstrap molasses, cumin, vinegar and spices. I make veggie kababs by threading lightly steamed rosemary potatoes, pearl onions, zuchini, yellow squash, and kolrabi onto wooden skewers. Marinate in olive oil and garlic for a bit, then grill them. Brush with bbq sauce towards the end of cooking time. Portabello mushrooms are also good on the grill, and sunflower veggie patties. I also like to grill fresh pineapple, with a brush of fruit juice. You could serve these with baked beans, a nice salad loaded with raw veggies, or cole slaw made with vinegar dressing. A nice fruit sorbet, served on top of the grilled pineapple would make a nice dessert.

    Good luck on you bbq!

Try Oriental Vegetable Kebabs with Peanut Dressing from a great recipe on the Vegetarian Society’s website – there’s no cheese or other dairy so it should be OK:

The Sweet Chilli & Shallot Marinated Corn Cobs also sound great:

    And for pudding:

    Gingered Pears with Raspberry Coulis:

or simply baked bananas. Peel some bananas, lay out on separate pieces of tinfoil, sprinkle with brown sugar & cinnamon, wrap the foil round the bananas & bake over the coals for an hour or so – yummy!

  12. Felicity O Says:

You have a lot of good suggestions already. One addition is grilling aubergine until soft. Scrape out the flesh (if you’ll pardon the expression) and mash with spices or herbs of your choice. Serve the resulting paté with flat breads – no yeast and no dairy products – yeast is a living organism.

Banana with chocolate in a foil bag.

    Most veggies are great roasted
Try some small turnips and beetroot
use your wok and wilt some pak choi

    loads of fun with veggies
Use tvp and marmite for burgers for your non veggie Friends
