    * 2 cups ketchup
    * 1 bulb garlic, peeled and crushed
    * 1 cup water
    * 2 tablespoons hot sauce
    * 1/4 cup honey
    * 2 tablespoons molasses
    * 2 tablespoons brown sugar
    * 1 teaspoon Worcestershire sauce
    * 1 teaspoon soy sauce
    * 1 teaspoon salt
    * 2 tablespoons Cajun seasoning
    * 1 pinch paprika
    * 1 pinch crushed red pepper
    * 1 pinch ground white pepper
    * 1 pinch ground black pepper
    * 2 tablespoons cornstarch
    * 1 tablespoon water
    * 1/2 cup butter

    DIRECTIONS

    1. In a large saucepan over medium low heat, mix together ketchup, garlic, 1 cup of water, hot sauce, honey, molasses, brown sugar, Worcestershire sauce, soy sauce, salt, Cajun seasoning, paprika, red pepper, white pepper and black pepper. Allow the mixture to simmer approximately 30 minutes.
    2. In a small bowl, dissolve cornstarch in 1 tablespoon of water. Adjust amount of water as needed to fully dissolve cornstarch. Stir into the sauce mixture. Continue simmering approximately 15 minutes.
    3. Stir butter into the sauce mixture. Continue simmering mixture approximately 15 more minutes, or until butter is melted and the sauce has begun to thicken. Serve over meats prepared as desired.

    i just start with open pit sauce and adjust it sometimes i like more to the hot spicy so i had Franks red hot sauce and some hot peppers. Sometimes i like a bit of sweet sauce so i squeeze lemon in the open pit with some brown sugar onions and butter and cook it for 20 to 30 minutes and you can add a little red hot sauce if you want it hot and spicy.

    bbq sauce

    2 cups ketchup
    1 cup brown sauce
    1 bulb garlic crushed
    2tbsp brown sugar
    1/2 cup golden syurp

    put all ingrediants in a pan and heat it up its lovely if you get a bitter taste add more syrup to sweeten it up

    BBQ sauce

    Makes ½pint

    Preparation time less than 30 mins

    Cooking time less than 10 mins

    Ingredients
    1 small onion, chopped
    3 cloves garlic, crushed
    olive oil
    1 red chilli, finely chopped
    1 tsp fennel seeds, crushed
    55g/2oz dark brown sugar
    50ml/1¾fl oz dark soy sauce
    300ml/10fl oz tomato ketchup
    salt and pepper

    Method
    1. Fry the onion and garlic in olive oil with the chilli, fennel seeds and sugar.
    2. Add the soy sauce and ketchup and season with salt and pepper.
    3. Bring to the boil and simmer for a few minutes to combine the flavours. Use as a dip or to coat spare ribs, chicken or sausages.

    Then cover ribs or chicken.
    Leave to marinade for at least 1/2 hr.
    Grill or bake.
