I usually do a sauce of butter, tabasco, minced garlic and lemon. Baste liberally.

Blackened Redfish……
INGREDIENTS:
* 1/4 cup butter, melted
* 1 teaspoon cayenne pepper
* 1 teaspoon freshly ground black pepper
* 1 teaspoon lemon pepper
* 1 teaspoon garlic powder
* 1 teaspoon salt
* 1 1/4 cups Italian-style salad dressing
* 4 (4 ounce) fillets red drum
DIRECTIONS:
1. Preheat oven to 350 degrees F (175 degrees C).
2. In a medium saucepan, melt the butter on low heat; cool to room temperature. Meanwhile, in a medium bowl, combine the cayenne pepper, black pepper, lemon pepper, garlic powder and salt. Set aside.
3. Dip the filets into the melted butter, then coat with the seasoning mixture.
4. In a large skillet over high heat, sear fish on each side for 2 minutes or until slightly charred.
5. Place in a 11×7 inch baking dish and pour the Italian dressing onto each filet. Cover baking dish and bake in a preheated oven for 30 minutes or until flaky and tender.

I don’t know about “fish barbeque” but try this…..My friend showed this to me and it’s REAL good ! just try it…
Take your fish batter(fish fry) or something, and mix it with mustard(maybe a little egg also) and grill it(must be grilled) Sounded not so hot to me at first, but it is awesome ! You don’t taste the mustard and somehow it really brings out a good flavor…we call it mustard battered fish. Call it what you want….I’m sure you will love it. Try it !
If you like hot and spicy, use cajun seasoning or dip in hot sauce.

Barbequed Crabs
“Grilled crab in a butter garlic sauce. Adjust the ingredients for the amount of crab you’re going to cook.”

INGREDIENTS:
* 1/2 cup butter
* 2 1/2 tablespoons garlic powder
* 2 1/2 tablespoons seasoning salt
* 2 tablespoons Worcestershire sauce
* 6 pounds whole Dungeness crab
DIRECTIONS:
1. Preheat an outdoor grill for medium heat and lightly oil grate.
2. In a medium saucepan over medium heat, melt butter. Mix in garlic powder, seasoning salt and Worcestershire sauce.
3. Remove legs from crab bodies. Pull apart shells and remove meat.
4. Loosely wrap crabmeat and legs in aluminum foil, and place on the prepared grill. Unwrap slightly, and coat with the butter mixture. Cook until pink and flaky, 15 to 20 minutes.

swordfish and shrimp kabobs. it’s easy and the best seafood you can get off the grill. also, try sea scallops. they’re great too. if you like spicy just use cajun seasoning like zataran’s. perfect every time.

Well use wine in a pan under the fish so that the wine evaporates up around the fish in the pit then squeeze some lemon on the fish and use some Zatarans to spice it up, grill it and enjoy

Soused Mackerel
Wrap the fish in tin foil with a sprinkling of vinegar and layered in a smear of butter. Season with salt n pepper.
Cook slowly just out above the heat
Trust me it’ll blow your mind!

Spicy Grilled Salmon Steaks With Black Butter
1 1/2 teaspoons freshly ground black pepper
1/2 teaspoon paprika
1/4 teaspoon cayenne
1 teaspoon garlic; minced
1 tablespoon onion; minced
1/2 teaspoon crumbled dried thyme
1/4 teaspoon salt
1 tablespoon olive oil
2 salmon steaks each about 1″ thick
1 tablespoon unsalted butter
In a bowl stir together the black pepper, the paprika, the cayenne, the garlic, the onion, the thyme, the salt, and the oil until the mixture forms a stiff paste. Pat the paste onto both sides of each salmon steak. Heat an oiled ridged grill pan over moderately high heat until it is smoking and in it saute the salmon for 3 to 4 minutes on each side, or until it is cooked through. While the salmon is cooking, in a small skillet cook the butter over moderate heat, swirling the skillet, until it is dark brown, but do not let it burn. Transfer the salmon to heated plates and pour the butter over it.

BARBECUED FISH IN HERB MARINADE
1/4 c. plus 2 tbsp. oil
2 tbsp. red wine vinegar
1 tsp. Dijon mustard
1/2 bay leaf, crushed
1/4 c. onion, chopped
1 sm. garlic clove, minced
1/4 tsp. dried basil, crumbled
1 lb. fish (or any meaty fish steaks) about 1 inch thick
Combine first 7 ingredients in shallow dish. Add fish, turning several times to coat with marinade. Let stand at least 1 hour, turning occasionally. Prepare barbecue. Grill fish until opaque, about 5 minutes per side, basting frequently. Serve immediately.

This is for a whole fish- clean the gut area inside, scale and defin. Wash and put on big platter. Make two slits ( not right through the fish) on both sides on the fish. Rub inside and out with some salt and some spices ( 1 teaspoon of cumun powder mixed with 1 teaspoon of curry powder) rub all over the fish inside and out. Filled cavity with chopped herbs and lemon slices, sew shut. In the slits put slices of lemon. Get one big piece of foil put a layer of leafy greens – like collards on it- place the fish, then cover with another layer of leafy greens.Close up foil, seal it well , not very tight. Then place over grill, and keep turning till you think it done. I have been doing this for years so takes a bit of experience and you can do it various ways. You can also spice it without the foil and place it directly on the grill. Works great either way- only with the other- you have lots of leafy veggies.

We love Salmon (wild of course) and our favorite way to bbq it up is on a cedar plank after we have rubbed it down with a homemade cajun spice mix. You can get an awsome rub mixture from Emeril Lagasse. It is the BEST.
We haven’t tried other fish cooked exactly like this but the rub we use is good on all fish so you could omit the cedar plank and just rub the fish down with your favorite hot stuff!

FAST, EASY, MMM MMM GOOD.
Heres a good one.. it works with all types of fish.. except salmon…. well ok maybe that too…
make a salsa mixture with tomatoes diced, onion, maybe some chopped up jalepeno or serano chili and cilantro (correander) put that on top of the fish and slice a lemon to top it off.
put your fish in foil… put enough to close the foil up when on the bbq.
the fish will cook in its own juices and the salsa mix and lemon flavor will sink into the fish.. mmmmmm mmm jucy and good. with just enough spice…(if you add the chilies). works real nice with Sword fish.
